I hear it

What you may ask? I am hearing songs on the guitar coming up from the basement from my hubby strumming on his guitar. Its been a long time since he has gone down there and just strummed. I have missed that!

We need to really get plugged back into a church, and get him back in on the worship team! I know he misses this, even though he says he doesn't. If only our old church had the teaching we are needing at this time in our lives, sigh.

But for now I will keep on encouraging him to go down and play, even if its just for a few minutes a day... but only when I am home, so I can hear it.. yep I am selfish like that! LOL

The Hunger Games

I just finished this series. The first book, I was disturbed by it, as I thought it was sick and twisted, that they would use kids from the ages of 12 to 18, to be thrown into a lottery to be pulled for the "games". They fight to the death to the sole victor. As sick as the book was, I couldn't stop reading. I proceeded to the 2nd and 3rd books rather quickly, and finished up the last one on Friday.

I am now ready for the movie that will be coming out in March. Now I need to find a new series to read. But then again, I have a ton of books that I have downloaded to my Kindle, I just have to pick one and start reading. I love getting the free ones, just have to remember what they are about, as I have been downloaded them all month and don't remember.

This is the year

For me getting some sort of camper! Now that I am working, I want to have some sort of camping attire... I am over the whole tent camping, so either a pop up, or a small motor home. I will be calling our insurance guy to get some rv insurance quotes. I am thinking it will be more along the lines of a pop up, so that means we will be getting a new vehicle as well so we can pull it.

With me working during the week, I will be going right from work to the camp site, so there MUST be great restrooms/showers, as I can't go into work smelling like campfires! That won't go over well at all! I may just change my work clothes before I leave work, and leave my slacks and blazer in my locker, and the tops for the week, just to be on the safe side to keep them smoke free.

Hopefully this all works out for us this year! I am ready to enjoy some camping this year, as we didn't go but once last year.

A few more weeks

I can hardly wait! Walking Dead will be back on! Its been a long 2 months! I am ready for my Fairy Tales and Zombie night to resume! I hope they will do an all day marathon so I can be refreshed with all that has happened this last season.

My mother in law thinks I am weird, as I am into weird things lately. First it was the vampires... but how can you resist a "sparkling vampire" as in Edward... oh my. Then the Zombie's and not the Hunger Games. I am still reeling from this book, as it blows my mind that they used kids in the games, and then the war. But that's fiction for ya!

There’s something to be said for having a go-to meal for every night of the week and that’s what I’ve been working on – making sure my family is well fed and it all falls within the budget my husband and I have set for food. Who would have guessed I’d be the gourmet of the household? He cooked for me on our very first date!

Why is it when you have the money you can never find what you want? And when you don't have any extra you find everything you want!?!? Two shopping trips out so far and not having much luck!

I did find a George Foreman grill, so that was nice. I have missed mine... no more getting splatter with grease when I make burgers and bacon! I used it tonight, and the burgers were yummy!

The next shopping trip will be later this week, as I need to find a pair of comfy black shoes and some black pants.

I think this is the first year John didn't get any funny tshirts from his mom for Christmas. She did get him a nice black shirt and a pair of jeans though. This will save me on a shopping trip for a pair, for the time being.

I had just went through his closet a month ago and weeded out all of his old, ratty t-shirts, in preparations for the new ones. Oops! So I guess I will be shopping for some t-shirts instead.

I love my gift from them, as I used a portion of it to get my Kindle Fire. The rest will go towards a semi new wardrobe for myself for my new job. Just got to find the time to go shopping!

Elf

I never get tired of this movie! Its on right now, and I am debating whether or not I want to stay up and watch it, or go to bed, as I have to get up early for work tomorrow.

And then the boy interrupts asking for help to make a shake. And silly me forgot to hit pause, I could rewind, but I am to lazy to find the remote. I should just go to bed. I can always go rent the DVD or dig in the box of all our VHS tapes to watch it later.

So with that, my bed is calling me... off to slumber land I go.

Fixing up the basement

I wanted to get some stuff, and try to surprise John with having his corner of the basment all redone, right down to the basement tile, but with this training for my new job and Trent getting sick, it has thrown a monkey wrench into my plans.

Maybe I can get all the things I need, and what not, and fix it all up for his birthday in July. By then, I will have enough money saved up and won't have to be so stingy on what and how much I spend! He has done enough for me in the past, that its time I start doing things for him!

What a game! Now granted I fell asleep and missed two quarters, but it was a close game most of the way. Just as I was getting ready to head out to get some food, I saw that they were down by a few, and it was at the 2 minute warning. I didn't think they would pull it off, and that it would be over with before I got back. But I should have known, 2 minutes can turn into 15, just like that!

I heard screaming and cheering, and knew that the game was still on and the Detroit must have done something good. They scored and were ahead by 1 point. The other team were getting ready for a field goal, when Trent yells out, block it! And sure enough they did, and that was the end of the game! Whew!

They are that much closer to the playoffs!

My dream home

I love looking at different ideas for my dream home. I have a specific style I want. Its very similar to the above picture. It will be set back in the woods a ways off the road, as John likes to be secluded.

I have the exact fireplace I want pictured in my head, and really love this one for the outdoors by the hot tub. That will be near the pool that will have an automatic pool cover to make things easier for me!! The pool house will also double as a craft area for me, that will be my little hide a way!

The master bedroom will have the most perfect master bath, with a jacuzzi tub, something like this would be nice! There will be a separate shower stall, that will have multiple shower heads, a his and hers sink. And most importantly, a HUGE walk in closet that will have more than enough room for all my clothes, shoes and purses!

Its a good thing I am starting a job this week, as my dream will soon become a reality!

Sunday nights

Just won't be the same now! This was my good TV night... first it was Fairytales, then Zombies. The Walking Dead is on a mid season break until February. I am still trying to figure out how and why I like this show. I don't normally care for this kind of stuff, but after watching two episodes I was hooked, and had to go find the first season on Netflix to get up to speed. I have since got another friend hooked on this show.

On a side note, Fear Factor is going to be coming back on on Monday nights. As well as a few other shows that will be back on from their hiatus as well! I am holding out for one, its a really stupid one, but it sucked me in as well!

After sending out lots of resumes and applying to various jobs, like Chiropractor Jobs, retail jobs and even my last resort of fast food jobs; I finally have a job! I will be working with a local hospital in one of the urgent care facilities as a registration specialist. I received my employee packet today, and have lots of paper work to go through and fill out before orientation on Monday.

I knew I would have a few days training, but wasn't prepared for the email I received today, and have 19 days of training over the month of December! I have to figure out how to get Trent home from school for the next two weeks, then it won't matter as he will be on Christmas break the last two weeks of Dec.

I am thinking I will be in the midst of all of those last minute shoppers, as my time has just been severed to shop!! Oh well!

I hate this time of year, as I never know what to get for my father in law for Christmas! Do I go with the montecristo cigars or with a homemade item? I know he probably won't smoke the cigars, so I guess its the homemade item. I think as a gag gift item, a beard/stash hat. I made one for a friend, and with Trent being my model for it, wants one. So I thought I would do this for him as well, and use the Italian flag colors for the hat, and a rust color for his beard. I can't wait to see his reaction when he opens his gift!!

Now I just need to figure out what to make and/or get for John's uncle!

Book Review - What's Age Got To Do With It? by Robin McGraw

I had high hopes for this book, but was disappointed after reading it. It didn't really give sound advice on living your healthy happy life. It was more all about her, in a "look at me" kind of way. I think that is why it took me so long to finish it and get this review written. If a book doesn't really hold my attention, I tend to put it aside and say I will get back to it.

I thought I would get some insight into the menopause phase women go through, but didn't really get anything that was all that helpful. I guess I will stick to asking advice from friends rather than rely on a quote unquote "self help" book.

I quit my job as a teacher six years ago to stay home with our three kids. I love being a stay-at-home mom, but sometimes I need a break. Our oldest kid just started kindergarten in the fall. The other two kids are home with me full time. By the end of the day, I am ready for my husband to be home. My kids quit taking naps over a year ago, so I really do not have any down time during the day. My husband does not usually get home until around 7pm, so I always try to start cooking dinneraround 6 or 6:15. I am not sure why, but this is usually the time of day when our kids are the most needy and whiney. A friend of mine told me that while she cooks dinner, she lets her kids play games on the computer, so I thought I would try it. We recently got internet by Satellite, so we now have access to all of the online kids games. I found some that are perfect for our kids. I let them play the games while I cooked dinner last night and it worked like a charm. It was like I had a mother’s evening out. I am so glad my friend gave me that idea.

Weekend work

This would have been our last weekend of having the house to ourselves, now that Trent has a job, but John has to go into work today as well. They had a huge order of stainless steel partner rings to get done for Monday.

Our oldest is moving back in sometime this weekend as well. So for now I am enjoying my quiet time in the house, as it will be few and far between. I have LMN on and am catching up on some movies.

I am hoping my hubby gets home early enough so we can either grab a bite to eat or go see a movie while Trent is at a Halloween party.

Bathroom remodel

This is the latest brainstorm of my hubby. He wants to tile the shower/tub, and possibly the floor. I don't know if I want to take on this project, as we only have the one bathroom. This seems like a catastrophe just waiting to happen. But with that said, he has been looking at different ideas, and flooring possibilities, one beeing an alloc original laminate floor.

I would just like to put down some all in one laminate, as I know for a fact that the floor itself up there isn't level, and what a headache we had with out kitchen floor when we put in hardwood!

I don't foresee this happening very fast, as he is so slow on the projects we need to get done. I just want him to patch the wall so I can paint, as least that part can be done, and if we do indeed put in a new floor, then I won't have to be so careful in the painting!

My favorite part of the Halloween season has always been carving a pumpkin. When I was a little girl I would try and carve the scariest jack o lantern that I could manage. A lot of the time I think that I spent so much more time than was necessary on it. Well now that I'm the one that's footing the bill for the pumpkins, I encourage my kids to carve as many jack o lanterns as they want and I do as many as I care to do to set out on our front porch.

A few weeks before October starts, I'm already online with my clearwire trying to find some great new ideas for carving pumpkins.

This year I saw where people had actually stuck Christmas lights on pumpkins to make them light up. It looked pretty cool, but I'll always go for the fun of actually carving pumpkins. It's just way more fun that way! This year I decided to make a zombie pumpkin and I actually did a really good job with it! My kids followed suit and made a zombie pumpkin each, so we grouped them together on our front porch as a little zombie pumpkin family!

its that time of year again, when I start racking my brain to come up with some new gift ideas for the guys. I did put some things on lay a way the other day, so I have officially started my shopping.

The boys have been asking for some games for the Wii, Playstation and the XBox, so I am on the hunt for those, as well as for some PC Games for my hubby. He still likes to play on the computer... one day we will convert him over to the game consoles!

While I have the Christmas Eve gifts covered for the guys, I need to find something for myself, that will go along with what I have for them, and this is proving to be a little tricky, but I will prevail! I always do!

Fall Lineup

Charlie's Angels ~ this one is so-so, but I still DVR it. Its still kinda cheesy like the older version.

Revenge ~ this one I like, and can't wait for the next week to see how it all unfolds.

Pan Am ~ I think I have given up on this one, as its just so, so lame!

Last Man Standing ~ This one, seems alot like Home Improvement, but only with it being a girl version. Not sure what I think, I will give it one more week.

Its almost Edward time!!! The final installment of Twilight comes out next month! I so can not wait! I would love to have one of those pop up displays that they have at the movie theaters. This would annoy my hubby to no end, but oh my, to be able to drool over Edward anytime I want while sitting in my craft room, the joy!

But wait, what craft room!?! The oldest is moving back in and will be taking over my craft room. Phooey! So I guess, I will just have to have this display in my bedroom... hee hee hee!

Yesterday was a fun one! I had lots to do, but some got cut short, or put me behind I should say. Once I arrived at Sunshine, my car slowly crept to a parking spot and died. Yes died! Ugh! I was hoping it was just the battery and would only need a jump to get her going again. I found a maintenance guy to see if he could give me a jump after my meeting. Thankfully that did the trick, but I was paranoid the remainder of the day thinking it would do this again when I picked up Trent. Luckily it started ok for me.

John looked at the terminals once he got home, and corroded they were! Still trying to figure out how they go so bad! Who knows!

So today, I want to soak in a nice hot tub filled with dead sea salts, to help calm my nerves, so I can proceed with my busy day of catch up! Oh how I love house work! NOT!

I would much rather be sitting in my nice comfy chaise knitting, but housework and yard work are calling my name. It needs to get done, as this week is going to be one of our last nice weeks before that dreaded 4 letter word arrives!

So I am off to take the boy to school, then home to enjoy the bath, then tackle my oh so fun job of house/yard work!

A busy couple of days

Busy day today! Drop Trent off at school, then I am off to Sunshine for my MomsNext meeting. Then it will be rush, rush, rush, as I need to get laundry done, dinner going, then back to pick up Trent from school, home finish the laundry, dinner, then back to Sunshine to drop Trent off at Campus Life.

So this means my Tuesday will be my day of cleaning, as well as yard work. The lawn needs mowed (Trent will do this), weeds trimmed, flower beds pruned, rose bush trimmed, lawn ornaments, chairs/table need to be put in the garage.

Its going to be a busy couple of days! Maybe by Wednesday or Thursday I can relax and just knit. Oh wait, Thurs. is another laundry day, let the vicious cycle return!

The final few days of summer are winding down, we have one last trip planned to end summer. We are heading to Indy for the final big drag race! Go Team Force!!! Trent thinks he will be doing some of the driving, but I don't think so. I am nervous enough with him just driving around town, let alone on the highway to another state! Yikes!

DQ attack...

Trent had a DQ attack... or should I say, a "drive attack". He is obsessed with driving right now! Every time we go somewhere he thinks he has to drive, and it is driving me crazy!

I told him we could go to DQ, but I was driving. Now ice cream is not on the list of fat burners, but it sounded really good, so off we went. I was trying to decide all the way there as to what I wanted.... a nutter butter blizzard or a shake. I went with a shake at the last second, but now wish I would have chosen the blizzard ~ oh well! Next time!

I have a feeling I am going to be a football widow. Trent has been slowly sucking John in to watching the games. The other night the Lions were on TV, so I was banished to my bedroom so they could enjoy the game on the big screen TV. Have I mentioned how much I hate not being able to pause live TV!?!?! I had to time my "getting things" when it coincided with the commercials. If I missed something I couldn't rewind... the horror! I so need to get digital cable in the bedroom as well as a DVR!! If only I could justify the extra expense!

Park playdate/shopping

Today was supposed to be a normal Monday of doing my normal "monday chores", but it turned into a park playdate and a shopping trip. After taking Trent to his school orientation, we headed home, grabbed some lunch then headed out to the park to meet up with a couple of moms and their kiddos. It was great seeing them, and enjoyed the "mom talks". We then headed to Target to do some shop/browsing. A few items we had to check the prices using those self serve barcode scanner things. One item rang up at a high price, so that item was put back down in a hurry. Too bad it wasn't on clearance like the others, as it was really nice.

I still have to get some school supplies for Trent, but those will have to wait until after the first day of school, as we still have no clue as to what he will be needing. I so hate how they have this set up, as everything is usually picked over. The must get item is a pair of shoes, as his reek, after this past weekend's trip to Michigan's Adventure.

Do you think its too eary to start thinking about high school graduation present ideas? Trent has two years left of high school, but I am already thinking about what I would like to get him. Its hard to believe that he will be done with high school! The sad thing is, I can't remember what I got for Christopher... can't have them thinking I am playing favorites!

I do know that I will be having a slide show played over and over again, via the computer that I can hook up to the TV, so this will be a bonus, so I don't have to do a poster board (that is if we have it here at the house). If we move, and have a bigger back yard, then I plan on keeping everything outside. But I digress, this is all two years away.

Her funeral service is taking place right now, then she will be brought back to the Ford Museum to be laid to rest next to her husband, President Ford.

Lots going on this week. After the way the week ended last week, we have lots of funerals going on with the mass murder, which I forgot about when I was coming back from the store and got caught up in all the traffic of everyone trying to get into the funeral home.

Then there is the funeral of the Former First Lady, Betty Ford. Today it was in California, and then she will be arriving here in MI tomorrow, with a public viewing at night, then the funeral on Thursday.

I have my grand opening party for Thirty One on Thursday, that I hope is a hit, as I really want to make a go of this!! And then some more shopping to do to get Trent ready for camp next week. Along with making some phone calls to get Trent signed up for drivers training... Yikes!

We are making lists already for what we will need for school in the fall. Going over everything we have thus far I have come to realize we don't have a webster learner dictionary in the house. Sure we have the internet handy, but what happened to the good old fashioned paperback one we used to have? So this will be added to the list of "must have's"!

Trent will be taking a sign language class, that I am actually excited about. I have always wanted to learn how to sign, and now through him, I can pick up on some things, and maybe continue in the learning process right along with him!

I was out and about today, and got a whiff of a cigar that someone was smoking, and it sure smelled good. I don't like smoking in general, but this brought back lots of fond memories from my childhood from relatives who smoked. Trent wants to get some rc batteries for his RC car that his grandpa gave him. I am hoping that this won't be to costly, as I can see him losing interest in this, just like he does with all of the other electronics he has, outside of his iPod right now. But I will go look for one, as I need to see home much a battery would cost for the scooter we have, as I want to try and sell it, and would like to give an estimate to the future buyer so they will have an idea.

Its June already? Trent is just about finished with his sophomore year, how can that be? He will be graduating before I know it! Driver's training will be starting soon, and this has be freaked out!

Camping season is right around the corner, with the first one being next week!! Hopefully it doesn't rain on us, but with our luck it will. Oh well, we will make the best of it.

Then the following week will be our vacation, trying to work out a 3 day/2 night stay at a cottage over Father's Day. Just to relax out in the middle of no where, with nothing to do but relax, fish and soak up the sun!

I finally convinced John to start working out again. He has to go slow with his shoulder injury, but once he gets past the pain he wants to get some muscle building supplements. Not sure if the company he buys his vitamins from have any, but its worth looking into, as we get a discount.

I need to stock up my vitamins as well, but just have to tweek the budget a little more to make room for the extra expense. If I can't, then its either, go without or get a part time job to pay for them. I am leaning towards going without, as I don't want to get a job!

I may be looking into nurses uniforms soon. I am thinking about going back to school. Not sure if I want to go into the medical field again or not. I want some sort of training so I can get a decent job. Its been over 16 years since I worked in the medical field, and outside of the house.

I was excited to see a box waiting for me by the mailbox when I got home the other day. It was my Bzz kit, inside was my COVERGIRL NatureLuxe and lip gloss! Yay!

I haven't been a fan of lip stick or gloss as they always seem to fade away or leave a nasty after taste, but with this lip gloss, there was no after taste and my lips stayed nice a glossy for some time. The foundation was so silky feeling when I applied, that I think I found a new foundation to continue to use from here on out.

Another gift

Trent was busy in woodworking class this school year. They had been working on a group project, which they have finally completed. The kids each got to take home one chair, and if there were any left over then it was first come first serve for the remainder chairs. So I am now a proud owner of some nice Adirondack furniture! They did such an awesome job! I now have to put on the weather treatment and then stain it so I can get it on my deck so I can enjoy them this summer!!

Last weekend my hubby and youngest son had a little snafu in their Mother's Day shopping, and had to postpone my gift until today. I couldn't figure out what they were up to, but went along with it.

Today my hubby went out to get his hair cut and grab a part for his car, but he was gone for such a long time. He comes walking in and calls for Trent and then says, clean your hands (I was busy cutting up veggies for our dinners). He then hands me an envelope. In it was a gift certificate for an hour long massage. Oh what pure heaven!!!

I can hardly wait to get it scheduled for this next week! The tension in my neck/shoulder area are in desperate need of this massage!!!

Slow...lagging

My laptop is giving me fits of being so very slow and lagging at times. I finally put all my pics on a flash drive and got the saved on the desktop and then put in my recovery disk to redo the laptop. So far everything seems to be running smoothly.

I have looked into refurbished laptops as an option, as I just don't have the money to go out and buy a new one right now.

Trent is still hoping I get a new one, as he wants to take over this one as his own. Silly boy!

Wednesday boredom

Lipofuze or not? That is the question. This go around at the gym I haven't seen/felt any results. If anything I feel fatter. I would in a heartbeat jump at the chance of getting all of the fat sucked out! I just need to work harder and throw out all of the junk food and sweets!

It doesn't help that I didn't make it to the gym at all last week, which really hurt after being gone over the weekend. It was so hard getting back into the swing of things yesterday (we skipped Monday as well as today.) Next week doesn't look all that promising either. I need to do something, or I will look like a blimp on the beach!

Baseball/softball season has started and already I have heard from a few friends who's kids have been injured. One of them is going to be needing an acl knee brace as he messed up his knee. He is really bummed, as they said he may be done with sports for the next year. Football season won't be the same without him!

Just one of the many reasons I am so thankful my youngest isn't into playing sports all that much!

Its almost camping season

So ready for camping season! I would love to buy a camper, if only I could talk my hubby into it. I have been comparing rv insurance quotes for that just in case moment he decides we can buy one!

So in the mean time I will be getting all of my camping supplies ready to go, and searching for that awesome clearance deal! I need to check on our air mattresses and make sure they don't have any holes. I do have to figure out the right way to pack my car so I don't feel like a sardine when I am driving it.

Spring cleaning time

I am hoping the cold weather is finally gone, as I am ready to get the cleaning started inside and out! I need to clean off the deck, so I can get the table and chairs out of the garage as well as the grill, as I am ready to fire it up! The yard needs a good raking.

As for the inside I need to check out raleigh carpet cleaning or some other carpet cleaners to find the best price for a whole house carpet clean. I want my house to "sparkle" for the just in case moment we do indeed list our house this year!

Lazy Thursday

I am having a lazy Thursday afternoon, got all my work done around the house and got in a quick workout. Now I am going to veg out for the rest of the day with LMN on until my hubby gets home. (and hopefully into the evening hours once he does get home.)

While watching movies, I am clipping coupons and working on my menu and grocery list for next week. I am also hoping to make out a list so I can go to Costco and stock up my new freezer!!! I so hope this investment starts saving us money with me being able to stock up on sales! Time to start searching for some prices on a half of beef!

One of us needs to look into hair loss products, and I am thinking it may be me! I spent the better part of the morning cleaning the bathtub and bathroom today, and my oh my... what a lot of hair did I clean up! Some were short hairs, so it leads me to believe its either my hubby's or sons, but there was so much long hair. Stress does take a toll of your hair, but I at least have a very nice, shiny clean bathroom! LOL

Biggest Loser

I do hope the red team didn't just mess up with what they chose for their week away from the camp! Even though I was envious of their spa treatment! I am so in need of a mani/pedi day right now! But my day will have to wait, as I have a major car problem going on right now, so I don't dare spend any money!

I am a little disappointed in my neighbor, I had asked him to look at it, and he said he would, but he never came over. I am hoping he didn't forget me again, like he did a few weeks ago!

I need to make the drive out to my inlaws to borrow their truck to bring home Trent's school project, but kind of freaked out about running out of gas. Ugh!

Medicare part D plans. My mother in law called the other day asking if we could go over these forms they received in the mail, as they are confused. So this will be our plans for Friday night, not what I want to do, as I need to get everything ready for my girls only weekend trip to Chicago. But what's a daughter in law to do? We will at least get a yummy dinner out of it, well, just as long as its not spaghetti!

I can't wait for tomorrow night! I am getting highlights! So glad I have a friend that knows how to do this, so I don't have to spend the big bucks at the salon! Now to go to the tanning beds to start on my tan, so my blond highlights will look awesome!!

She wants me to do her hair as well, I so hope I don't screw hers up!

School projects

Trent is finishing up his first project in wood shop, an adorondack chair. I get to pick it up tomorrow, and can't wait to see how well of a job he did! He is already working on plans for gaming desktops and a TV stand for his room. He has been on autocad with his dad all weekend trying to come up with the right drawing plans. I am so glad he is interested in this, as its something he and his dad can do together.

I found this cleaning recipe somewhere online a while back for a safer cleaning mix for the bathroom. Use 1/4 cup Dawn dish soap, put in a large squirt bottle, then fill the bottle with vinegar. This mixture does wonders on soap scum in the bathtub. The fumes are less powerful than the commercial products out there.

Spring Cleaning

The Spring cleaning bug has hit me. I started today with the bathroom, and boy was that a chore! But the tub looks better than ever! Next up is our bedroom. I want to take everything out of our closet and put back only the stuff we have used in the last year, so that means my hubby's custom coins will have to be moved to a different location.

I would so love to paint in our bedroom, but that would mean my hubby would be the one helping me, as I can't move our bed by myself. Let's just say, that painting with my hubby isn't all that fun. Its been a long time coming for our room to be finally redone since moving in. I should just bite the bullet and ask him to help me!

Trent took care of cleaning his room, and on his own. He rearranged and cleaned it last week when he had a snow day. Yep, a snow day at the end of March!

Outside my window... Its a really dreary Monday afternoon. I was so hoping for some sunshine today

From the kitchen... I just finished making the spaghetti sauce and then later will be making biscuits for our strawberry shortcake.

Vacation

I am ready for a vacation! As soon as we hear back to whether or not we owe on our taxes, then I am going to start making plans for a vacation! I am tired of the snow, and just want to hang out at one of these Outer Banks beach rentals, on the beach! But first I need to go to the tanning booth, so I don't scare anyone away with my white legs! This will just get me more in the mood to either go to Hawaii or Jamaica for our anniversary next year! And we WILL go away for next year!

Cannoli's

I am going to try and make cannoli's this coming weekend. John and I are going to be hanging out at home for our anniversary. Trent will be at the grandparents for the weekend! I plan on making a nice dinner on Friday, with the cannoli for dessert. I am going to be using his grandma's recipe, so I hope they turn out!

Ingredients
Shells:
3 cups all-purpose flour
1/4 cup white sugar
1/4 teaspoon ground cinnamon
3 tablespoons shortening
1 egg
1 egg yolk
1/2 cup sweet Marsala wine
1 tablespoon distilled white vinegar
2 tablespoons water
1 egg white
1 quart oil for frying, or as needed

Filling:
1 (32 ounce) container ricotta cheese
1/2 cup confectioners' sugar
1 cup chopped candied citron
4 ounces semisweet chocolate, chopped (optional)

Directions

1. In a medium bowl, mix together the flour, sugar and cinnamon. Cut in the shortening until it is in pieces no larger than peas. Make a well in the center, and pour in the egg, egg yolk, Marsala wine, vinegar and water. Mix with a fork until the dough becomes stiff, then finish it by hand, kneading on a clean surface. Add a bit more water if needed to incorporate all of the dry ingredients. Knead for about 10 minutes, then cover and refrigerate for 1 to 2 hours.

2. Divide the cannoli dough into thirds, and flatten each one just enough to get through the pasta machine. Roll the dough through successively thinner settings until you have reached the thinnest setting. Dust lightly with flour if necessary. Place the sheet of dough on a lightly floured surface. Using a form or large glass or bowl, cut out 4 to 5 inch circles. Dust the circles with a light coating of flour. This will help you later in removing the shells from the tubes. Roll dough around cannoli tubes, sealing the edge with a bit of egg white.

3. Heat the oil to 375 degrees F (190 degrees C) in a deep-fryer or deep heavy skillet. Fry shells on the tubes a few at a time for 2 to 3 minutes, until golden. Use tongs to turn as needed. Carefully remove using the tongs, and place on a cooling rack set over paper towels. Cool just long enough that you can handle the tubes, then carefully twist the tube to remove the shell. Using a tea towel may help you get a better grip. Wash or wipe off the tubes, and use them for more shells. Cooled shells can be placed in an airtight container and kept for up to 2 months. You should only fill them immediately or up to 1 hours before serving.

4. To make the filling, stir together the ricotta cheese and confectioners' sugar using a spoon. Fold in the chopped citron and chocolate. Use a pastry bag to pipe into shells, filling from the center to one end, then doing the same from the other side. Dust with additional confectioners' sugar and grated chocolate for garnish when serving.
